I'm toying around with the idea of building a MAME cabinet for some mizzad classic arcade gaming goodness and want to use a standard TV monitor. Reason being you can get one a lot bigger and cheaper than a VGA monitor. Anyway to insure the screen quality is at it's best I want to be able to run the video card to the TV's component video input.

I know ATI makes some component video adapters but they all seem to say "for HDTV". If you don't have an HDTV reciever, but the TV still has component video will this work? If not, are there any video cards that have a direct component video output that don't require any sort of adapter?

There are DVI to Component adaptors. Pretty cheap and work fairly well from what I've heard. Most AGP cards have DVI these days so it shouldn't be a problem.

I don't think there are any video cards with specific component outputs. There are TV's though with DVI video inputs so you could go straight from the card to the TV without using some adaptor. Most new HDTV's have them.
